Nourish: Miso Ginger Mussels

After the whirlwind of hosting and cooking for Thanksgiving, this is the kind of meal that feels like a gentle exhale. Warm, comforting and  savoury, these miso ginger mussels come together quickly but taste like something slow-cooked and thoughtful. The miso brings depth and richness, the ginger adds brightness, and the sake ties everything into a silky, umami-packed sauce you will want to scoop up with toasted sourdough.

Ingredients

  • 850 grams of mussels soaked in salt water for 30 minutes to remove any sand
  • 2 tablespoons of miso paste
  • 1 tablespoon of finely chopped ginger
  • 3 cloves garlic minced
  • 150 milliliters sake
  • 1 red chilli thinly sliced
  • Zest of 1 lime
  • Oil for sautéing

Steps

  1. Heat a little oil in a pot and sauté the garlic and ginger until fragrant then stir in the miso paste and let it melt into the aromatics.
  2. Pour in the sake and let it simmer for a minute so the flavours come together then add the mussels and cover the pot. Cook until all the mussels open then finish with sliced red chilli and lime zest then grate a little extra lemon zest over the top right before serving.
  3. Taste and adjust if needed then serve immediately with toasted sourdough or a bowl of rice to soak up every drop.
