Nourish: Steamed Sake Clams

A dish that feels both simple and special. Our sake clams come together in minutes, with a broth that’s deeply infused with the floral warmth of sake yet remains light, savoury and delicious any time of the day. It's also fully customizable—swap ginger for garlic if you prefer a more garlicky broth, or add miso for deeper umami.  It’s the kind of recipe that transforms a weeknight into something quietly celebratory.

Perfect with steamed rice or crusty bread. A reminder that good ingredients need little else. We hope summer is treating you well. 

Ingredients

  • 500 grams of fresh clams, cleaned and soaked
  • 1 cup sake
  • 1 thumb-sized piece of ginger, thinly sliced
  • 1 fresh red chilli, sliced (adjust to taste)
  • 2–3 green onions, cut into 2-inch pieces
  • Salt, to taste

Steps

  1. In a pot or deep pan, combine sake, ginger, and chilli and bring to a gentle simmer.
  2. Add cleaned clams, cover with a lid, and cook for 3–5 minutes or until the clams open, shaking the pan occasionally.
  3. Add green onions and season lightly with salt to taste.
  4. Serve immediately with the fragrant, savoury broth poured over.
