Nourish: Assorted Mushroom Soba

Simple, comforting, and deeply savoury, this mushroom soba is the kind of bowl that warms you from the inside out. Earthy mushrooms meet the gentle umami of dashi, creating a broth that’s both light and rich, perfect for quiet evenings or when you want something nourishing but easy. As the days grow colder, a bowl like this feels like both a luxury and a hug — warmth you can hold in your hands, soothing and simple in the best way.

Ingredients

  • 1 serving soba noodles
  • 1 cup dashi (about 240 ml)
  • 1 teaspoon mirin
  • 1 teaspoon sake (plus a splash for the mushrooms)
  • 1 teaspoon soy sauce (adjust to taste)
  • A handful of assorted mushrooms (shiitake, shimeji, enoki or oyster mushrooms)
  • 1 teaspoon neutral oil
  • 1 small piece of ginger, grated
  • Chopped green onions, for garnish

Steps

  1. Heat oil in a pan and stir fry the mushrooms with grated ginger and a splash of sake until tender and fragrant.
  2. In a bowl, mix dashi with mirin, sake, and soy sauce, then pour it into a pot and bring to a gentle boil before setting aside.
  3. Cook soba noodles according to package instructions, then drain.
  4. In a serving bowl, place the noodles, top with the sautéed mushrooms, pour the warm broth over, and garnish with chopped green onions.
