Nourish: Fig Tempura

Golden on the outside, tender on the inside, fig tempura is one of those fleeting pleasures best enjoyed warm when the batter still crackles. We love their simplicity: sweet figs, a whisper-thin coating, and endless ways to serve them - with honey as a light bite, or with mascarpone or ice cream for something softer and more indulgent. It’s a simple recipe that always surprises, more versatile than you might think, and we hope you enjoy it as much as we do.

Ingredients

  • 3–4 fresh figs (ripe but firm)
  • ¼ cup all-purpose flour (30g)
  • ¼ cup cornstarch (30g)
  • 80–100 ml ice-cold sparkling water or beer (add gradually until you get a light batter)
  • Neutral oil for frying (grapeseed, sunflower, or canola)

Steps

  1. Slice the figs into quarters and set aside. Prepare the batter by whisking together the flour and cornstarch in a small bowl, then slowly add the ice-cold sparkling water or beer, stirring just until combined. The batter should be thin, slightly lumpy, and very cold.
  2. Fill a small pot with about 3–4 cm of oil and heat it to 170–180°C. Dip each fig piece into the batter and carefully place them into the hot oil.
  3. Fry for 1–2 minutes per side until pale golden and crisp, then remove with a slotted spoon and drain on paper towels. Serve warm with a drizzle of honey, or pair with mascarpone, crème fraîche, or a scoop of ice cream for dessert.
