Nourish: Fried Enoki Mushrooms

The delicate texture of enoki mushrooms, coated in a light, crispy batter, offers a satisfying bite that complements the softness within. These mushrooms take minutes to prepare and make an elegant appetizer or side dish for your evening gatherings. Serve them with a squeeze of lemon, your favorite dipping sauce to enhance the flavors or keep it simple with just good old mayonnaise.

Fried Enoki Mushrooms Recipe 

Ingredients

  • 200 grams enoki mushrooms, trimmed and separated into small clusters
  • 1 cup all-purpose flour
  • 1 cup cold sparkling water
  • 1/4 cup cornstarch
  • 1/2 tablespoon baking powder
  • 1/2 tablespoon paprika
  • 1/2 tablespoon garlic powder
  • 1/4 tablespoon freshly cracked black pepper
  • Salt to taste
  • Vegetable oil for frying
  • Lemon wedges, for serving
  • Mayonnaise or aioli

Steps

  1. First we prepare the mushrooms. Clean the enoki mushrooms by gently wiping them with a damp cloth. Trim the roots and separate the mushrooms into small, bite-sized clusters.

  2. To make the batter, in a large mixing bowl, whisk together the flour, cornstarch, baking powder, paprika, garlic powder, black pepper, and a pinch of salt.

  3. Slowly add the cold sparkling water, stirring just until combined. Be careful not to overmix; the batter should be slightly lumpy.

  4. In a deep pan, heat the vegetable oil over medium-high heat until it reaches 350°F (180°C). To test if the oil is ready, drop a small amount of batter into the oil – it should sizzle and float to the top.

  5. Dip each cluster of enoki mushrooms into the seasoned batter, making sure they are evenly coated.

  6. Carefully place them in the hot oil and fry for 1-2 minutes, turning occasionally, until they are golden brown and crispy.

  7. Use a slotted spoon to transfer the fried mushrooms to a cooling rack to drain excess oil.

  8. Immediately sprinkle with a pinch of salt. Arrange the fried enoki mushrooms on a serving platter with lemon wedges on the side or a dipping sauce of your choice.
