Nourish: Gochujang Cheese Toast

This is the kind of thing you make without thinking - quick, comforting, and always better than you remember. The edges crisp just right, the middle turns soft and gooey, and there’s that perfect balance of spice and creaminess that keeps you coming back for another bite. It’s simple but deeply satisfying, the sort of toast you could make half-asleep and still feel proud of. It tastes like something you shouldn’t crave as much as you do  - buttery, a little fiery, and almost too easy to love. The kind of toast that somehow feels right at any hour, whether it’s a late-night snack or a slow morning indulgence.

Ingredients

  • 1–2 slices of bread (sourdough or white sandwich bread work great)
  • 1 tablespoon gochujang (Korean chili paste)
  • 1 tablespoon mayonnaise
  • ½ cup shredded cheddar cheese (or Västerbotten if you can find it!)
  • 1 tablespoon butter, for the pan

Steps

  1. In a small bowl, mix together about a tablespoon of gochujang with an equal amount of mayonnaise, then fold in a generous handful of shredded cheese until evenly coated.
  2. Warm a nonstick pan over medium heat and add a small knob of butter, letting it melt and coat the surface. Once it starts to sizzle gently, lay down your slice of bread and spread the gochujang-cheese mixture evenly across the top.
  3. Let it cook until the underside is golden and crisp, the cheese softening with the heat. Gently flip and toast the other side until perfectly bronzed and the cheese is molten.
  4. Slice and eat immediately, while it’s still hot enough to pull apart in strings. It’s simple, spicy, and impossibly good - we hope you enjoy it as much as we do!
