The first weeks of September bring a new rhythm — cooler mornings, softer light, and mushrooms appearing in the woods. Chanterelles, golden and delicate, carry the flavour of the season: earthy, tender, quietly luxurious. On toast, with butter, this becomes something warm and grounding, yet bright at the edges.
This is food for the in-between - a little indulgent, but simple enough for a weekday supper or a slow weekend breakfast. Cooked quickly in a pan, then piled onto crisp bread and scattered with chives, it feels like a small celebration of harvest, best enjoyed while the air outside is just beginning to turn.
