Ingredients

  • Pasta of your choice
  • Salt (for pasta water)
  • 100–150 grams guanciale, diced
  • 1 small onion, finely chopped
  • 1 cup fresh or frozen peas
  • 2 tablespoons of butter
  • Freshly grated Parmigiano Reggiano
  • Salt and black pepper, to taste
  • Optional: lemon zest to finish

Steps

  1. Bring salted water to a boil and cook pasta until al dente. Meanwhile, in a wide pan over low heat, render the guanciale slowly until crisp and its fat is released.
  2. Add chopped onion and cook gently until soft. Stir in peas and butter, allowing everything to come together into a glossy sauce.
  3. Add cooked pasta directly to the pan with a splash of pasta water if needed.
  4. Toss well with grated Parmigiano, adjust seasoning with salt and pepper, and finish with a little lemon zest if you like. Serve immediately.
