Nourish: Soboro Don

January feels like a time of reset and quieter rhythms. Meals become less about indulgence and more about comfort. Minced chicken gently simmered in a sweet savoury seasoning, soft scrambled egg, and sweet green peas, all spooned over hot rice. An easy dish that works well for meal prep or can be quickly put together for a light, nourishing meal.

Ingredients

  • 300 grams of minced chicken
  • 1 tablespoon of neutral oil
  • 1 tablespoon of sake
  • 1 tablespoon of mirin
  • 1.5 tablespoon of soy sauce
  • 1 teaspoon of sugar
  • 1 teaspoon of grated ginger
  • 1 egg, lightly beaten
  • A handful of green peas, boiled until tender
  • Steamed white rice, for serving

Steps

  1. Mix the minced chicken with the ginger, sake, mirin, soy sauce, and sugar and let it marinate briefly while you prepare the other ingredients.
  2. Heat the oil in a pan over medium heat, add the marinated chicken, and cook gently, breaking it up as it cooks. If the mixture looks dry, add a small splash of water and continue cooking until the chicken is cooked through and lightly glazed.
  3. In a separate pan, gently scramble the beaten egg over low heat until just set and soft, and warm the green peas if needed.
  4. To serve, spoon hot rice into bowls and top with the minced chicken, scrambled egg, and green peas placed neatly side by side.
