Nourish: Summer Frittata

As the days grow longer and warmer, there’s nothing quite like a dish that captures the essence of summer. This frittata does just that. It’s a delightful combination of fresh ingredients that are in their prime during this season. And the best part is you can make it with whatever vegetables you have on hand with you. Simple, wholesome, and bursting with flavor, this frittata is perfect for breakfast, brunch, or a light dinner. Whether you're enjoying it al fresco or in the comfort of your kitchen, this dish brings a touch of summer to every bite. This recipe uses some vegetables of the season like zucchini and frittata but feel free to personalize it to your liking. Let's dive in.

Summer Frittata Recipe 

Ingredients

  • 1/2 medium zucchini, thinly sliced 
  • 1 small onion, thinly sliced
  • 1 handful of cherry tomatoes, halved
  • 3 large eggs
  • 1/4 cup milk or cream
  • 1/2 cup grated Parmesan cheese (or your favorite cheese, a mild cheddar also works perfectly)
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Steps

  1. Preheat the oven. Set your oven to 375°F (190°C) to ensure it’s ready for baking. In an oven-safe skillet, heat the olive oil over medium heat and add the onions and cook for a few minutes until they become soft and translucent. Add the zucchini slices and cook for another 3-4 minutes until they begin to soften. Add the tomatoes into the pan until they release their juices. Season with salt and pepper.
  2. In a large bowl, whisk the eggs together with the milk or cream and the grated cheese. Season with salt and pepper. Pour the egg mixture over the sautéed vegetables in the skillet, ensuring even distribution. You can choose to also grate more cheese on top of the egg mixture but this is optional. Let the egg and vegetable mixture cook on the stove top for about 2-3 minutes on medium heat until the edges begin to set. Transfer the skillet to the preheated oven and bake for 15-20 minutes, until the frittata is fully set and lightly golden on top.
  3. When the frittata is set and slightly lightly golden on top it is ready, remove it from the oven and let it cool for a few minutes before slicing. Enjoy it warm or at room temperature. This goes perfectly with a crisp salad on the side or some bread.

The simplicity of the dish allows the vegetables of the season to shine, and it is so easy to make. Take it with you for a picnic and enjoy the long summer days!
