Nourish: Sweet Potato with Apple Salsa

With the festive season around the corner, it’s the perfect time to explore dishes that bring balance to the richness of the holiday table. This baked sweet potato topped with apple salsa is a vibrant and refreshing side that complements the hearty flavors of Thanksgiving. The earthy sweetness of the potato pairs beautifully with the tangy, herby brightness of the salsa, making it a light yet satisfying addition to your feast.

Sweet Potato with Apple Salsa Recipe 

Sweet Potatoes Ingredients

  • 4 medium sweet potatoes
  • 1 tablespoon of olive oil
  • Salt and pepper, to taste

Apple Salsa Ingredients

  • 1 medium apple, finely diced (use a crisp variety like Honeycrisp or Fuji)
  • 1 small white onion, finely diced
  • 1 small tomato, diced
  • 1 deseeded red chili, finely chopped
  • 1 clove garlic, minced
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp fresh mint, chopped
  • Juice of 1 lemon
  • 1 tablespoon of apple cider vinegar
  • 1 tablespoon of honey
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper, to taste

Steps

  1. Preheat your oven to 200°C (400°F). Scrub the sweet potatoes clean and pat dry. Slice each potato vertically in half, then prick the flesh a few times with a fork.

  2. Rub with olive oil and sprinkle with salt and pepper. Place on a baking sheet lined with parchment paper, cut side up.

  3. Now for the salsa, in a mixing bowl, combine the diced apple, onion, tomato, chili, garlic, parsley, and mint.

  4. In a small bowl, whisk together the lemon juice, apple cider vinegar, honey, and olive oil. Season with salt and pepper. Pour the dressing over the salsa and toss gently to combine. Adjust seasoning to taste. 

  5. Once the sweet potatoes are out of the oven, let them cool slightly. Slice each potato down the center and fluff the flesh with a fork. Spoon generous amounts of the apple salsa over the top. 

  6. Serve warm or at room temperature as a vibrant side dish to your Thanksgiving feast. Each bite offers a delightful mix of earthy, sweet, and tangy flavors that bring a refreshing change to the table.
