Nourish: Carrot Miso Salad

A simple, earthy dish that highlights the quiet beauty of everyday vegetables. Carrots, shaved into soft ribbons, meet a miso–soy dressing that’s savoury with just the right touch of sweetness. Light, refreshing, and perfect for summer - a salad that feels both grounding and energising, something you can keep returning to through the seasons. The ribbons catch the dressing delicately, each bite carrying a balance of umami and brightness. It’s a dish that feels effortless  much like the best summer meals. Perfect as a side or just as it is, ideally chilled. 

Ingredients

  • 5 medium carrots, peeled into ribbons
  • 2 tablespoons of soy sauce
  • 1 tablespoon of miso paste
  • 1 tablespoon of honey
  • 1 teaspoon of sesame oil
  • 1 tablespoon of sesame seeds, toasted

Steps

  1. Peel the carrots into thin ribbons with a vegetable peeler and place them in a large mixing bowl.
  2. In a separate bowl, whisk together the soy sauce, miso paste, honey, and sesame oil until smooth, then pour the dressing over the carrot ribbons.
  3. Toss gently to ensure the carrots are evenly coated, and finish by sprinkling with toasted sesame seeds just before serving.
