Nourish: Chinese Eggs and Tomatoes

In the calm moments of the day, when the world feels a little softer, there’s a dish that brings comfort like a warm embrace. Stir-fried tomatoes and eggs is a Chinese dish that is familiar and soothing to many, especially when prepared in the heart of the home and is filled with flavors that make you feel grounded.

A pinch of salt, a hint of white pepper, the gentle aroma of Shaoxing wine. Chinese Eggs and Tomatoes Recipe 

Ingredients

  • 3 large eggs, organic if possible
  • 2 large ripe tomatoes
  • 1/2 teaspoon salt
  • A pinch of white pepper powder
  • 1 teaspoon Shaoxing wine
  • 1 teaspoon sesame oil
  • 1/4 cup tablespoons water
  • 1/2 teaspoon sugar
  • 1-2 tablespoon vegetable oil
  • Fresh chives, finely chopped

Steps

  1. Begin with the tomatoes—slice them into wedges and set aside.

  2. Crack the eggs into a bowl. Add the salt, white pepper, Shaoxing wine, whisking gently until the mixture is harmonious. 

  3. Heat the vegetable oil in a well-seasoned wok or pan over medium heat. Pour in the egg mixture, allowing it to set for a few moments before gently stirring, creating soft folds of the golden silk.

  4. Once almost cooked but still tender, slide the eggs onto a plate. 

  5. In the same wok or pan, add a little more oil and let the tomatoes meet the heat, releasing their vibrant juices.Sprinkle the sugar on the tomatoes and let it cook for 2-3 minutes, stirring occasionally.

  6. Add the water in so it melds into a sauce.

  7. When the tomatoes are just on the edge of collapsing, return the eggs into the pan, gently folding them together. 

  8. Drizzle with sesame oil, a finishing note that rounds out the dish. Scatter the chives atop and the dish is ready to eat. This is especially delicious with white rice.
