Chirashi Don Ingredients

• 1 cup short-grain rice 
• 4 ounces of sashimi grade fish of your choice: we used salmon, sea bream, tuna
• 2 tablespoons ikura (fish roe)
• Garnish with chopped green onions

Sushi Seasoning Ingredients

• 3 tablespoons rice vinegar
• 2 tablespoons sugar
• ½ teaspoon salt

1. Cook your rice according to package instructions.
2. While your rice is cooking, make your sushi seasoning. Heat all ingredients in a saucepan until the sugar has dissolved and then set aside to cool.
3. Mix cooked rice with sushi seasoning and let cool a few minutes before adding fish — you don’t want the heat of the rice to cook your fish.
4. Cut your fish into 1 inch cubes.
5. Add your fish to your rice.
6. Top evenly with ikura.
7. Garnish with green onions.
