Miso Eggplant Recipe 

Ingredients

  • 2 medium eggplants, cut into bite-sized pieces
  • 2 tablespoons miso paste (white or yellow)
  • 1 tablespoon sake
  • 1 tablespoon mirin
  • 1 tablespoon hot water
  • 1 tablespoon white sugar
  • 1 tablespoon neutral flavoured oil
  • 1 spring onion, thinly sliced (for garnish)
  • White sesame seeds (for garnish)

Steps

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper. Toss the eggplant pieces in oil and spread them evenly on the baking sheet. Roast in the oven for 20-25 minutes, or until tender and slightly caramelized, turning once halfway through.

  2. While the eggplant is roasting, make the miso glaze. In a small bowl, mix the miso paste, sake, mirin, hot water, and sugar until smooth and well combined.

  3. Once the eggplant is done, toss the roasted pieces in the miso glaze, ensuring they are evenly coated. Return the glazed eggplant to the oven and roast for an additional 5-7 minutes to let the glaze caramelize. Remove from the oven, transfer to a serving dish, and garnish with thinly sliced spring onion and a sprinkle of white sesame seeds.

  4. Serve warm as a side dish or light main with rice, and enjoy the subtle umami-rich flavors of this Japanese-inspired comfort dish.

* You may also make this in an airfryer. To do so, preheat the air fryer to 180°C (350°F). Place the eggplant pieces in the air fryer basket in a single layer and cook for 10-12 minutes, or until tender and golden brown then tossing the eggplant with the miso glaze and cooking it for an additional 5-7 minutes.
