There’s something magical about starting the day with a stack of fluffy pancakes, especially when they’re paired with a luscious homemade peach maple syrup. With peaches in season now, their sweet, vibrant flavors are at their peak, making this the perfect time to enjoy them. This recipe combines the simplicity of classic pancakes with the freshness of the ripe peaches, a touch of maple syrup, and a hint of cinnamon, creating a meal that feels both indulgent and comforting. Perfect for a lazy weekend morning or a special brunch, these pancakes are sure to become a favorite in anyone’s household.
Firstly, we make the peach maple syrup. In a medium saucepan, combine the sliced peaches, water, and lemon juice.
Bring to a boil over medium heat, then reduce to a simmer.
Cook, stirring occasionally, until the peaches are soft and the syrup has thickened, about 15 minutes.
Remove from heat and stir in the vanilla extract and ground cinnamon.
Set aside to cool slightly.
Now to prepare the pancake batter, sift together the flour, baking powder, salt, and sugar in a large bowl.
In another bowl, whisk together the milk, egg, melted butter, and vanilla extract.
Pour the wet ingredients into the dry ingredients and stir until just combined.
Heat a lightly oiled griddle or frying pan over medium-high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake.
Cook until bubbles form on the surface of the pancakes and the edges start to look set, then flip and cook until golden brown on the other side, about 2-3 minutes per side.
Keep the pancakes warm in a low oven while you finish cooking the remaining batter.
Stack the pancakes on a plate and generously drizzle with the homemade peach maple syrup. Garnish with a few extra peach slices if desired, and enjoy your delightful meal.
