Pomelo Salad Recipe
Salad Ingredients
- 1 pomelo, peeled and separated into bite-sized segments
- 12 shrimp, cooked and peeled
- ¼ cup roasted peanuts, crushed
- ¼ cup fresh mint leaves, roughly torn
- ¼ cup fresh coriander, roughly chopped
- 2 small shallots, thinly sliced
- 1 red chili, finely sliced (optional, for heat)
Dressing Ingredients
- 1½ tablespoon of fish sauce
- 1 tablespoon of lime juice
- 1 teaspoon of palm sugar
- 1 red chilli, seeds removed and finely chopped (optional)
- Fried shallots
Steps
- Peel the pomelo and carefully separate the flesh into bite-sized pieces, discarding the membrane.
- If using raw shrimp, blanch them in boiling water for 1-2 minutes depending on size until pink and firm. Drain and let cool. In a small bowl, mix together fish sauce, lime juice, palm sugar, chopped chili. Stir until the sugar dissolves.
- Next we assemble the salad. In a large bowl, gently toss the pomelo, shrimp, shallots, mint, coriander, and chili with the dressing. Sprinkle with crushed peanuts and fried shallots and serve immediately in your favourite OWIU ceramic bowl and enjoy!
