Nourish: Roasted Grapes With Burrata

Grapes are at their sweetest right now, and while often thought of as a fruit to snack on fresh, they transform entirely when roasted. The heat softens their skins, concentrates their sugars, and draws out a caramelised depth that pairs beautifully with creamy burrata and crisp bread. A simple dish, yet one that feels abundant - perfect for the table when friends gather, whether as an aperitif for hosting or a starter to share.

Ingredients

  • 500 grams of red grapes, stems removed
  • 1 tablespoon of extra virgin olive oil
  • 1 tablespoon of balsamic vinegar
  • A few sprigs of fresh thyme
  • Flaky sea salt, to taste
  • 1 ball burrata
  • Toasted bread, for serving

Steps

  1. Preheat the oven to 200°C. Place the grapes on a tray and drizzle with olive oil and balsamic vinegar. Season with flaky salt, add the thyme, and toss everything together until evenly coated.
  2. Roast for about 30 minutes, or until the grapes have softened, blistered, and released their juices.
  3. Once done, transfer them to a serving plate, nestle in the burrata, and spoon over the warm juices along with the roasted thyme leaves.
  4. Serve immediately with slices of toasted bread, letting the creamy burrata and grapes mingle together with the fragrant thyme.
