Vegan Maewon Bibimyeon Recipe 

Spicy Sauce Ingredients

  • 3 tablespoons gochujang (Korean red pepper paste)
  • 3 tablespoons rice or apple vinegar
  • 3 tablespoons sugar
  • 1 tablespoon sesame oil
  • 1 tablespoon sesame seeds
  • 1 tablespoon soy sauce
  • 1/2 teaspoon gochugaru (Korean red pepper flakes)
  • 3 cloves garlic, grated

Noodles & Toppings Ingredients

  • 200 grams somyeon (Korean wheat noodles) or angel hair pasta (generous portion for 1 serving or 2 small servings)
  • 1 cucumber, julienned
  • Crushed sesame seeds

Steps

  1. Cook the somyeon or angel hair pasta according to the package instructions. Once cooked, drain and rinse under ice cold water until completely cool. Drain well and set aside.

  2. For the sauce, in a bowl, combine gochujang, rice or apple vinegar, sugar, sesame oil, sesame seeds, soy sauce, gochugaru, and grated garlic.Mix well until the sugar is fully dissolved and the sauce is smooth. 

  3. In a large bowl, toss the cooled noodles with the spicy sauce until the noodles are evenly coated. 

  4. Arrange the julienned cucumber. Garnish with crushed sesame seeds. 

  5. Mix everything together before eating to ensure each bite is full of flavor.
